This summer we've been trying to enjoy fruits and vegetables that are at their freshest. We've savored strawberries, grilled summer squash and zucchini, roasted corn and red potatoes, sauteed green beans, among others. Recently, I've been reminded that the summer is nearing an end and that one of our favorite fruits is in harvest: Blueberries!
I found a recipe for the "Perfect Blueberry Muffins" via SmittenKitchen.com. They were easy to make, used only one mixing bowl, and taste great. I highly recommend them! Find the link here: http://smittenkitchen.com/2010/08/perfect-blueberry-muffins/
A couple edits I made to the recipe:
- I used about 1 cup of blueberries
- I tried it once with plain yogurt, and once with plain Greek yogurt. I liked the results with the plain Greek yogurt best- the tops of the muffins appeared more browned and the texture wasn't quite so round and flat.
