Turkey Meatballs - my own creation



We haven't had spaghetti in quite a while until a couple weeks ago. I decided to jazz it up with meatballs. We had some extra lean ground turkey in our freezer so I used that to create my own meatballs. They turned out really tasty! We were surprised at how good they tasted since they were made with the extra lean ground turkey. You could make these meatballs with any kind of meat.

Ingredients:

1 pound ground turkey
1/2 cup Italian style panko crumbs (if you don't have Italian style, I would add a few more seasonings to the mix)
1/4 cup parmesan cheese (grated or shredded)
1 tsp. oregano
1 tsp. minced garlic
olive oil

Mix all of the above ingredients except for the olive oil together by hand in a bowl. Form small meatballs. Drizzle olive oil in a skillet and cook meatballs over medium to medium high heat until browned. Cut a few in half to make sure they are done.

Add the meatballs to your favorite pasta and sauce and enjoy!

August harvest: Fresh blueberries






This summer we've been trying to enjoy fruits and vegetables that are at their freshest. We've savored strawberries, grilled summer squash and zucchini, roasted corn and red potatoes, sauteed green beans, among others. Recently, I've been reminded that the summer is nearing an end and that one of our favorite fruits is in harvest: Blueberries!

I found a recipe for the "Perfect Blueberry Muffins" via SmittenKitchen.com. They were easy to make, used only one mixing bowl, and taste great. I highly recommend them! Find the link here: http://smittenkitchen.com/2010/08/perfect-blueberry-muffins/

A couple edits I made to the recipe:

  • I used about 1 cup of blueberries
  • I tried it once with plain yogurt, and once with plain Greek yogurt. I liked the results with the plain Greek yogurt best- the tops of the muffins appeared more browned and the texture wasn't quite so round and flat.
